Fried Eggs And Pancake Pockets
Cook a tasty and well rounded breakfast on your sandwich grill - two fried eggs and two pancakes (or any combination thereof). All it takes is a few minutes to warm up the grill and a few minutes to cook. Short on utensils, these pancakes are perfect finger-food size.
Turn on the electric sandwich grill to allow it to begin preheating. A good sandwich grill will give you an indication that it is ready to cook. While the grill preheats, prepare the instance pancake mix per the instructions for thicker pancakes.
Pour pancake mix into some of the pockets of the electric grill. Take care not to overfill each pocket as this won't provide enough room for the pancakes to rise in the grill causing the pancakes not to be very fluffy … and nobody wants that! The pancakes will cook for 5 minutes.
Crack the eggs into the empty grill pockets. Eggs cooked for the full 5 minutes will be well done. If you'd like your eggs less well done, close the grill for 1 to 2 minutes before adding the eggs. Either way, give the pancakes 5 minutes total cook time.
