Ingredients

  • 2 oz Sliced Pre-cooked Chicken Breast
  • 2 oz Shredded Mexican Cheese
  • 3 tbsp Black Beans
  • 3 tbsp Tomatoes with Lime Juice and Cilantro
  • 2 large Tortillas

Cilantro Lime Chicken Quesadilla

This quesadilla is delicious, meaty, and super easy to make for lunch or dinner.

Method:

Preheat the tortilla maker and strain the black beans and tomatoes.

Place a tortilla on the tortilla maker and spread the shredded cheese, strained beans, diced tomatoes, and grilled chicken on top. Cover with an additional tortilla and cook for the time dictated by your tortilla maker. Ours was about 5 minutes.

Cover only half the bottom tortilla with ingredients and fold the tortilla in half before cooking.

Sandwich Maker Instructions

You can make really great quesadilla pockets in a sandwich maker. The instructions are generally the same. Place the tortilla in the middle of the sandwich maker. For best results, make sure that the tortilla covers the sandwich wedges so that it'll seal appropriately (it travels better this way).

Fill the pockets with ingredients, fold the tortilla over, and close the sandwich grill. Our sandwich maker cooked the quesadilla pockets perfectly in about 2.5 minutes.
