  • 3 slices Jalapeño Pepper
  • 1 pinch Mexican Cheese
  • 1 pinch Pre-cooked Real Bacon Bits

Southwestern Omelet Pockets

Spice up your morning with this quick omelet recipe for your sandwich grill. It takes only a few minutes to prepare and 5 minutes to cook. Toss a slice or two of bread on the other side of your sandwich grill for some toast to go along with it.

Preparation

Turn on the electric sandwich grill to allow it to begin preheating. A good sandwich grill will give you an indication that it is ready to cook. While the grill preheats, dice the bell peppers, slice the jalapeños, and beat the egg.

Cooking

One beaten egg will fill two sandwich pockets pretty much perfectly. Distribute the egg evenly between the two pockets and start your 5 minute timer. Take your time adding the ingredients here. It'll give the omelet time to cook a little on the bottom so the ingredients will be well contained.

Sprinkle in the bell peppers, bacon, cheese, and jalapeños and close the grill. Once the eggs have been cooked for five minutes, the southwester omelet pockets are ready to eat. Season to taste and add a little hot sauce if desired.

Recommendations

I like mine with toast. I'll take two slices of white bread and toss them on the other side of the sandwich grill with the eggs. 5 minutes makes toast about perfect for me.
